So as I sit here yet again reading the Forum with my ever present faithful friend "Joe" as in "Java" "Nectar of the Gods" "Black Gold" etc., it doesn't matter if it's hot, cold, warm, or iced; it can be strong and black or sweet and light; espresso or weak; flavored or plain - I don't function without it running through my veins at least at a 1 to 1 ratio.
I am coffee AND tea! First I have a cup of fresh-brewed coffee, which I make using a tea ball and ground coffee. THEN, because it is very good for you, I have a little cup of green tea.
Today being Sunday, I get TWO cups of coffee, AND I had some coconut cake with lemon-coconut icing which came out of the freezer from when it was made last Sunday. YUM!
Monday through Saturday, I drink black coffee and pair it with raw sunflower seeds on the side. The combo is strangely delicious.

I took the easy way out on the cake itself, and used Duncan Hines Moist Deluxe Classic White Cake mix, from the box. Wanted to see if I could half it, as we try to eat healthy every day but Sunday (Junk Food Day), and it halved with no problem (one layer in a round cake pan). I would suggest using a piece of parchment paper in the bottom, if you have it, 'cause when I tried to flip it out on a plate, the bottom half of the cake stuck, and I had to pry it out. Yeeps!
For the creamy, lemony, light-yet-rich frosting, I adapted a recipe from the book Baking, contributing editor Carole Clements. Here is hers:
"1/2 cup (1 stick) unsalted butter, at room temperature One cup confectioner's sugar grated rind of one lemon Six to eight tablespoons fresh lemon juice One four-ounce can shredded coconut
"Cream the butter and confectioner's sugar until smooth. Stir in lemon rind and enough lemon juice to obtain a thick, spreadable consistency."
This looked like it would make WAY too little frosting, even for my one-layer cake. So here's the modification I used - I'm guessing a bit, as that was two weeks ago:
Two sticks butter (yaayuh!), softened to room temperature Two cups or two-and-a-half cups confectioner's sugar (easy to adjust) grated rind of one lemon 6-8 tablespoons fresh lemon juice Maybe half a bag of Baker's coconut? I would guess about four cups, some toasted, some not. Don't know how many ounces that is.
You make the frosting, then after spreading it on, hand-apply the coconut all over the cake. Voila! You are ready to feast! It will take all my willpower NOT to eat the other piece that was left over, until after hubby leaves for work. I have to at least give him a CHANCE to have a little more.

You're welcome. Yes, if a recipe seems like too much trouble - as it did to me before I decided to use the box mix - it sometimes falls by the wayside. For some reason, making frosting doesn't seem over the top (get it?). Cake is a little more, but not insurmountable. But both together - yikes! I have to be having a really high-energy day to take that on.

Every morning, I have one tall mug of coffee with lots of half-and-half. Our favorite brand is Chock Full o'Nuts (I know really odd name, but it is our favorite and we have tried them all).
After dinner, each night, we have a cup of tea with our dessert. We use one flavored tea bag and two regular tea bags to brew it in our "Mrs. Tea" maker.
In the summer, we also like cold green tea and the Ginger Ale Green Tea that comes in cans. And, we like iced coffee in all forms during the summer.
However, I really don't care for regular tea that is not flavored . . .guess I am fickle.

Actually, I never had an avatar on the other two forums, but decided I wanted to here. Found this cute kitty and couldn't resist.
I remember when I wore younger clothes.... in the evenings when I'd fix cocoa for the kids, I'd have a cup too--and sometimes I'd pour myself a shot of wiskey! lol One shot cured the day's hassel and made for a good night's sleep!
Gosh, I look back and smile to myself. It's a good life we have.
